Macadamia Nut Slaw Recipe

This slaw has veggies for fiber, pumpkin seeds for zinc and magnesium, and Raw Macadamias for rare omega-7s.

It's crisp and crunchy, and you can make it in ~10 min.

Ingredients (4 servings):

  • 4 cups purple cabbage
  • 2 medium carrots
  • 1 apple
  • 2 scallions
  • 1/3 cup Raw Macadamias
  • 2 tbsp pumpkin seeds
  • 2 tbsp tahini
  • juice of 1 lime
  • 1 tbsp apple cider vinegar
  • small handful cilantro
  • pinch of salt
  • 1 tbsp Extra Virgin Olive Oil (optional)

Instructions:

  1. Shred the cabbage and carrot. Core and thinly slice the apple. Slice the scallions.
  2. Whisk the tahini, lime juice, apple cider vinegar, salt, and a splash of water into a pourable dressing.
  3. Toss the cabbage, carrot, apple, and scallions with the dressing.
  4. Top with Raw Macadamias, pumpkin seeds, and cilantro.
  5. Add a drizzle of Extra Virgin Olive Oil (optional).

If you prefer, you can chop the macadamias for a finer crunch.
